The Gyoki Sashimi Knife is a knife used by chefs employed at the shop Gyoki. It is a very sharp and polished blade primarily used for cutting fish and preparing it into a fine sashimi.
This knife is one of the many that Melk the Second is tasked with sharpening. She mainly uses a Gradient Whetstone for the sharpening process which she can use to instantly restore and sharpen the blade with a single stroke.
Komatsu had the good fortune of witnessing Melk sharpen this blade first hand.
